Ace Combat 4. It took an approach on realism concerning physics.

Mines is a toss up between 2 and 3 (JP version of course).
2 great music I still listen to Bear Tracks, Fire Youngman and Dystopia to this day. Great plane selection and it introduced the "super airplane concept" with the XFA-27. Multiple endings and good variety of missions.
3 had Multiple endings, numerous choice options that aactually impacted which missions and ending you'd see and a decent selection of aircraft. Very engrossing in-game communications. Perhaps a little far fetched but still dang fun.
I've only played a handful of ace combats, but if I have to choose, I'd say Joint Assault. I loved the wide variety of jets and weapons.
With the addition of an emulator (and cheats :3) It became an absolutely ridiculous experience tearing enemies apart with a Falken with TLS and FAEB or a Varcolac with infinite lswm. not to mention that there were 6 skins for each jet and tons of parts that made the experience even more fun. The soundtrack was also pretty good (AC2 flashbacks ha ha). [TL:DR, the game has tons of fun replay value.]
